I use the ‘split new’ command in Audacity to highlight and split off edits onto new tracks
this is something I would like to do in Ardour but after a cursory search can’t find a way to do this
is this possible?

I assume you want to split a long track into separate chunks and move some to a separate track.
Use the |<->| tool and click-drag a region on the track. Right-click and select “Convert to region in-place”. To preserve the exact location of the region click it with your middle mouse button (scroll-wheel) and drag it vertically to a different track, otherwise use the left button to drag it.
