Sorting tracks in Tracks/Buses pane

Is it possible to sort tracks in the Tracks/Buses (is the spelling “busses” intentional?) pane alphabetically - or for that matter, by any criteria?

Automatically no. But you can easily drag and drop them in whatever order you want.
