I am new at Ardour and I am trying to adress the correct Midi Instrument Channels of my Edirol Ochestra VST to the Midi Tracks separately (violins, violas, cellos, etc.) but without success.
All tracks are playing continuously only the instrument of Channel 1 (ex: violin), even changing to different Channels.
Where can I find some help about this issue?

That VSI instrument is seriously old – I don’t know anything about it beyond a cursory search just now. It appears to be capable of serving up multiple instruments on separate MIDI channels, but I don’t know whether its outputs can be fanned out (to allow mixing / balancing them via the DAW).
The quick-and-dirty way to use it would be to put an instance of the plugin on each track, and then set up the MIDI input follows MIDI track selection preference: you can then use your MIDI keyboard to play / record notes for one track without triggering the others.
There are multiple ways to do that, as long as the plugin is working properly. What are you using for MIDI input ? MIDI files? External Keyboard ? Built-In Keyboard ?
Here are a few ideas, but it does depend on your situation and setup:
If you are playing MIDI tracks into the VST and they all happen to be transmitting on channel 1, you may be able to use the MIDI Transform Tool to change the channel.
