What I would like to achieve is to increase/decrease output volume of each track. For example, if I have 3 inputs with set gain levels (which I would not like to change throughout the recording process) for 3 tracks, respectively, I would like to listen to the tracks in different volumes. Is this possible? Thanks.
Yep possible. That is what the mixer is for: Menu > WIndow > Mixer (or use the button “Mix” top-right).
Ardour always records the input as-is. The Trim and Fader gain are for playback only [1].

[1] it is possible to override this and do wet recoding, but that’s rather advanced.
I am not looking for playback volume. I want to adjust monitoring volume for each tracks or inputs in Ardour. Is there something that I am not understanding regarding the signal flow or input/output?
I am not certain I understand your question then. Can you restate it?
I would like to monitor my recording with an option to adjust each input’s volume. For example, I would like to listen to all 10 inputs, but the first 5 input’s volume being louder than the last 5 inputs. Is this possible with Ardour?
Assuming you use software monitoring (option in Ardour Window > Audio/MIDI Setup) then you can just use the faders.
During recording tracks monitor input and the signal flow is as follows:
Input → [write data to disk] → fader → master-bus → playback (speaker/headphone)
PS. A more advanced option is to use foldback busses for personal monitoring for individual musicians each having their own distinct mix.
