I need to change that 4 in Tempo to an 8 (and if there was a way to get a dotted figure, that would be awesome). I tried with right clicking the tempo, but there isn’t an option to change the meter on tempo, and changing the metric doesn’t affect the tempo. So how can I do it?

There’s currently no correct support for dotted values.
By default, Ardour assumes that 1 beat is a quarter (as does almost every other DAW). To change it, you first have to explicitly allow other units. You will find that option in Edit > Preferences > MIDI > Allow non-quarter note pulse
