I can use the GuitarPort as an input device in Audacity, but cannot for the life of me figure out how to do it in Ardour- is it even possible to do? If so, how? Is it something I would need to configure in Jack, or in Ardour2 itself?

if you can use it in audacity with alsa. it should work with jack too.
and yes, you have to configure (choose) you audio device with jack (use qjackctl)
