Ardour (if I understand correctly) does not allow you to enter metadata for a .wav file. Correct?
On the other hand using VLC (linux) I can’t add metadata to a wav file (…maybe VLC can’t do it?)
Currently, to have the maximum compatibility of a .wav file with various systems, is it still not recommended to try to add metadata to a .wav file and therefore better to ignore them altogether?

The original standard for WAV files did not have provision for metadata. Some programs will add metadata chunks to a wav file, but I don’t think it can be considered standardized.
The Broadcast Wave format defines metadata chunks. Container formats like Ogg have standardized metadata fields, so you could use e.g. PCM data in an Ogg container (although losslessly compressed using flac would be much more common).
